Banana Wheat Muffins

Ingredients

  • 1 cup flour

  • 1 cup whole wheat flour

  • 1 tsp. baking soda

  • 1/2 tsp salt

  • 1 cup mayonnaise

  • 3/4 cup sugar

  • 1 cup mashed ripe bananas (2-3medium)

  • 3/8 cup semi-sweet chocolate chips

Directions

  • Preheat oven to 350 degrees. Grease 12-cup muffin pan or 6 jumbo muffin pan.

  • In a large bowl, whisk together flour, wheat flour, baking soda, and salt.

  • In another bowl, combine mayonnaise, sugar, and bananas.

  • Add banana mixture to flour mixture and stir just until moistened. Fill muffin cups. (I fill them almost to the top)

  • Bake for 20 mins for the 12-cup muffin pans or 25 mins for the jumbo muffin cups.
