Banana Wheat Muffins
Ingredients
1 cup flour
1 cup whole wheat flour
1 tsp. baking soda
1/2 tsp salt
1 cup mayonnaise
3/4 cup sugar
1 cup mashed ripe bananas (2-3medium)
3/8 cup semi-sweet chocolate chips
Directions
Preheat oven to 350 degrees. Grease 12-cup muffin pan or 6 jumbo muffin pan.
In a large bowl, whisk together flour, wheat flour, baking soda, and salt.
In another bowl, combine mayonnaise, sugar, and bananas.
Add banana mixture to flour mixture and stir just until moistened. Fill muffin cups. (I fill them almost to the top)
Bake for 20 mins for the 12-cup muffin pans or 25 mins for the jumbo muffin cups.
