Creamy Cottage Cheese Waffles
This recipe has been doubled from the original. Makes about 4 batches (16 square waffles).
Ingredients
8 Tbsp unsalted butter (1 stick)
1 3/4 cup all-purpose flour
1 3/4 cup whole wheat flour
4 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2 cups cottage cheese (16 oz container)
2 cups milk
4 large eggs
1/3 cup honey
Directions
Preheat waffle iron
Melt the butter and reserve for later
In a medium bowl, whisk together flour, baking powder, baking soda, and salt
In a large bowl, beat together the cottage cheese, milk, eggs, and honey to combine.
Gradually add the dry ingredients to the cottage cheese mixture, stirring only until the dry ingredients are incorporated. Stir in the melted butter.
Using a laddle (approx 1/3 cup), add 2 scoops to the hot iron. Bake until browned and crisp.
