Creamy Cottage Cheese Waffles

This recipe has been doubled from the original. Makes about 4 batches (16 square waffles).

Ingredients

  • 8 Tbsp unsalted butter (1 stick)

  • 1 3/4 cup all-purpose flour

  • 1 3/4 cup whole wheat flour

  • 4 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp salt

  • 2 cups cottage cheese (16 oz container)

  • 2 cups milk

  • 4 large eggs

  • 1/3 cup honey

Directions

  • Preheat waffle iron

  • Melt the butter and reserve for later

  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt

  • In a large bowl, beat together the cottage cheese, milk, eggs, and honey to combine.

  • Gradually add the dry ingredients to the cottage cheese mixture, stirring only until the dry ingredients are incorporated. Stir in the melted butter.

  • Using a laddle (approx 1/3 cup), add 2 scoops to the hot iron. Bake until browned and crisp.
