Tomato Soup

pairs nicely with grilled cheese sandwiches

Ingredients

  • 1 Tbsp butter

  • 1/4 yellow onion, chopped

  • 1 yellow bell pepper, chopped

  • 1 Tbsp basil, chopped

  • 1/8 tsp ground red pepper

  • 2 cups tomato juice

  • 1 cup buttermilk

Directions

  • In a medium saucepan, cook onion and bell pepper in butter over medium heat until very tender, about 5 minutes. Stir in basil and ground red pepper. Cook and stir for 1 minute more. Remove from heat.

  • In a blender, combine vegetable mixutre, tomato juice, and buttermilk. Cover and blend until smooth.

  • Return mixture to saucepan and heat through.
