Tomato Soup
pairs nicely with grilled cheese sandwiches
Ingredients
1 Tbsp butter
1/4 yellow onion, chopped
1 yellow bell pepper, chopped
1 Tbsp basil, chopped
1/8 tsp ground red pepper
2 cups tomato juice
1 cup buttermilk
Directions
In a medium saucepan, cook onion and bell pepper in butter over medium heat until very tender, about 5 minutes. Stir in basil and ground red pepper. Cook and stir for 1 minute more. Remove from heat.
In a blender, combine vegetable mixutre, tomato juice, and buttermilk. Cover and blend until smooth.
Return mixture to saucepan and heat through.
