Whole Wheat Pancakes

I love whole wheat flour and it tastes fantastic in this recipe. Nice and moist!

You can serve them with jam or eat them plain.

Ingredients

  • 1-1/4 cup whole wheat flour

  • 1/3 cup cornmeal

  • 1-1/2 cups buttermilk

  • 1 Tbsp sugar (heaping)

  • 2 tsp baking powder

  • 3/4 tsp baking soda

  • 3/4 tsp salt

  • 2 eggs

  • 3 Tbsp butter, melted

  • canola oil (to brush griddle)

Directions

  • Blend all of the dry ingredients together. Mix in all of the wet ingredients and whisk without over-stirring.

  • Brush the oil on the griddle before adding the batter.

  • Serve with butter and syrup. (we used Boysenberry syrup)
