Whole Wheat Pancakes
I love whole wheat flour and it tastes fantastic in this recipe. Nice and moist!
You can serve them with jam or eat them plain.
Ingredients
1-1/4 cup whole wheat flour
1/3 cup cornmeal
1-1/2 cups buttermilk
1 Tbsp sugar (heaping)
2 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
2 eggs
3 Tbsp butter, melted
canola oil (to brush griddle)
Directions
Blend all of the dry ingredients together. Mix in all of the wet ingredients and whisk without over-stirring.
Brush the oil on the griddle before adding the batter.
Serve with butter and syrup. (we used Boysenberry syrup)
